My Li'l Corner in August

 I wanted to tell you about a very short shortcut  (Thank you, Joybilie Farm, for the idea!)  for making fresh sauerkraut if you don't like to bother with shredding cabbage.  I didn't grow cabbage this year so I bought 4 bags of coleslaw mix (on sale, of course :)  to make this half-gallon of  probiotic rich kraut.   I used this method for the fermentation process and let it ferment for four weeks.

We've indulged in lots of homegrown Rutger's tomatoes with our meals all month long.

August has been a busy, hot mess of interminably muggy days, but thankfully we've had rain and cooler temperatures for the past couple of days.  A friend from out of state was here visiting for a week so we did day trips to places she wanted to see.  However, this is the only photo I took.

There was a monumental traffic delay due to construction just yesterday in the GSMNP.   So, if you're planning a trip to the Smokies soon go here and check the status of construction in the areas you'd like to visit.

My friend took a few pictures, and sent them to me so I'm adding them here.

I love seeing the misty clouds hovering on the treetops.


Rosacea Update:
For the past two years I've tried a lot of things that didn't clear up the rash I had.  On July 4th, just last month I talked with someone that had taken a supplement that cleared the rash so I decided to give it a try.  I've been taking Dr. Gundry's Vital Reds supplement for the past month, and it has helped in reducing the degree of flushing and cleared nearly all the bumps I had experienced for the past two years.  I'm also watching my carb intake, but that alone wasn't enough.  I'm glad I heard of this product.

  3. Love your variety of images. I do like some fresh tomatoes, so yum! My mom used to make kraut in a crock on the back porch.

  4. Oh aren't fresh tomatoes, sublime????? All I can do this year, is enjoy looking at them, and making sure my husband has lots of them. Since the 6 teeth extraction, I have to eat only liquid or very soft foods. And I don't think the acid from the tomatoes, would be wise, at all.

    But I make sure he has his fresh tomatoes and picked-this-morning corn, from the Farm Stand.

    Glad you are getting relief, with the Rosacea! Mine just 'went away' I guess. Don't really remember. All I have there, are tiny blood vessels, in that spot, beside my nose. And that awful flushing is not there. Still when I get hot, my whole faces flushes! But maybe, that is just me.

  5. What a great tip to use the pre-cut coleslaw! I have used that in many recipes before but never thought of doing sauerkraut! I'm so excited to try that now.

  6. Your state looks very beautiful, I love seeing your nature photos (thanks to you friend for allowing you to share hers with us too!). I never tried sauerkraut before but you got me curious so maybe I'll try your recipe when cabbages are in season again. :-)

    Once I tried making sauerkraut but it was way too salty. I’m going to wait til winter and try again.

  11. That sauerkraut recipe sounds great. The tomatoes look so delicious, I would love a tomato sandwich. As fall approaches, traffic will fill the Smoky Mountains. Hope you have a wonderful fall.

  13. I'm just catching up on several posts!! I have been missing out! I soo enjoyed seeing the Smokies pictures. I grew up going to the Smokies EVERY year on vacation but haven't really been in the last LOTSA years since marriage. So it was fun to see that it's still as I remembered it...although maybe a little more crowded.
